Zucchini Hummus

When I mention hummus as an ideal snack to my clients, some of them are hesitant. They either don't like the taste of beans or find it makes them gassy afterwards.

That's what led to this delicious hummus creation. Zucchini is easy to digest and even aids digestion! Plus, it’s a good source of fiber and vitamins A and C, so it's great for the immune system, too 🙂.

It doesn't get much more simple than this:

Zucchini Hummus​

Ingredients:

​​

  • 2 medium organic zucchini (14 oz), sliced into large pieces

  • 1/8 - 1/4 cup olive oil

  • 4 to 6 cloves garlic, minced 

  • 3/4 cup tahini

  • 3/4 raw pumpkin seeds

  • 1/2 cup lemon or lime juice

  • 1/4 tsp. cayenne

  • 1 tsp. ground cumin

  • 1 tsp. paprika

  • Sea salt to taste

 

Directions:

  • Place all ingredients in food processor and process until smooth.  

  • That's it! 

​

Crudités are the traditional dippers for hummus, but try some tart Granny Smith apples for something a bit unexpected but delicious!
